Making Kosher for Passover matzoh at Streit's Matzoh, Lower East Side, NYC. By Jewish law, to keep matzoh fit for use during Passover one must complete the entire matzoh-making process - from the time the grain comes into contact with the water up to and including the completion of the baking of the matzoh - within 18 minutes. Matzoh is taken from the oven and sorted into stacks of 11 pieces, which are placed in wire baskets. The baskets will carry the pre-sorted matzoh to the packaging room where each stack will fill an 11 0z. box.
